  • The 2007 growing season was spectacular with Mother Nature doing more than we could’ve asked. It was much drier and cooler overall except for two very notable heat spikes in July and late August. To compensate for lower water availability, the grape vines naturally produced smaller, more tightly clustered grapes resulting in high flavor concentration and excellent quality.

    Fermentation & Aging
    Made in the true Blanc de Noirs style, the grapes were picked, gently pressed and removed from skins early and the juice quickly extracted to accentuate the crisp fruit flavor and to assure a bright jeweled color. The wine then underwent arrested fermentation in cold stainless steel tanks to ensure fruit that held its acid.
