YOU'VE NEVER HAD A SOUR BEER LIKE THIS BEFORE
Tart Lychee is making a triumphant return. Our newest Lips of Faith sour release starts as a golden lager brewed with sweet lychee fruit and aromatic Vietnamese cinnamon before it's blended with sour Felix from the wood cellar for an intense marriage of sweet and sour. It’s a highly anticipated release here at the brewery (we haven’t made it in a few years), so we caught up with wood cellar manager Eric Salazar to chat about how his team creates the sour beer.
Tell us a little bit about the origins of Tart Lychee.
We first tasted Lychee juice in Hawaii back in 2008. You can actually get it in a bottle and drink it like a fruit drink. It’s really good; it’s sweet and has a distinctive flavor and aroma. Here, Lychee juice is hard to come by because you have to source it from Indonesia. Tart Lychee is really modeled after the same idea as Transatlantique Kriek, where it’s got a malty base, something that’s going to give it a little more body with a little higher alcohol.
