The Whip
ul>FERMENTATION: A portion of the Chardonnay and the Sauvignon Blanc were fermented in small oak barrels to add a roundness to the blend. The remaining Chardonnay and Sauvignon Blanc, as well as the Semillon, Viognier, and Orange Muscat were fermented cold in stainless steel tanks as individual components. This maintains the wine’s natural acidity and vibrant freshness.
AGING As we assemble the blend, we begin to incorporate more barrel aging into our program. As we age the wines for a total of 14 months, we use both methods of barrel and tank aging to both build texture and mouthfeel as well as maintain freshness and acidity.
